Blackberry and Orange Cordial
Makes 500ml (about 25 portions)

Blackberry and Orange Cordial - 248kcals and 2.9g of fat per serving
- 600g black berries
- juice and zest 3 oranges
- juice and zest 1 lemon
- 100ml light Agave nectar
- 150ml water
- sparkling water to serve
Place all the ingredients into a saucepan, then gently bring to the boil. Allow it to boil for 15 minutes or until the blackberries have entirely broken up and it has gone syrupy. You can help I along the way by using a potato masher to break them up.
Pour through a fine sieve and using the back of a wooden spoon encourage the pulp out. Transfer into an old (sterilized) glass bottle or long plastic Tupperware container.
Use about 1cm of cordial with sparkling water and ice for a deelish refreshing drink!
